This Festive Bikini – The Method

We present a home-style version of a beverage found on a new menu. Designed as a batch premix that is packed with flavours of a Christmas time, which makes it excellent for hosting a festive gathering. Any leftover cordial you can use for morning drinks, desserts, or to make additional servings of the drink.

Bikini

Yields 10 servings

Ingredients for the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Combine every ingredients inside a pan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the burner and leave to cool down completely. Transfer into an sterilised bottle, seal and store chilled, it can be stored for up to a month.

Preparing the Batch Mix: Mix every spirits and syrup into a large bottle, leave to sit for an hour, then filter it best through a fine cloth, making it fully clarified.

For serving: Measure 85ml of your premix into your stirring glass filled with ice, and stir lightly for about 60 seconds to chill. Filter into a frosted cocktail glass or equivalent, decorate with some cranberries and complete it with a quick spritz of the essential oil over the top.
